how does the enterprise system thing work? ie. how does it know what is spam and what isn't?

I don't know but it is amazingly good at it...
I do know that it forwards all the spam you go to another email address that you can check later.

The spam filter mainly uses two RBLs, the spamhaus exploits blacklist and the spamhaus policy blacklist. For mail not blocked due to those RBLs, it searches email for known spam patterns based on human-approved spam messages in a very frequently updated database and blocks messages that match.

It depends on how you have it setup. You can set in the control panel for it as to quarantine the messages, send them to a certain email address, etc.

I don't see an option in the control panel to customize the filtering. I have set the MX record to mx0.steadfast.net with priority 10 and that's all. Where would I find the the quarantine options?
By the way, I just signed up with Steadfast before the weekend and I'm impressed with your support. Very nice team you have.

That's what I used to configure the spam filter. However, it's not clear if all the messages pass through and just a header is added to the ones suspected to be spam, or if the header is added and the messages are placed in some folder I don't know how to access. This is the text in the Knowledge Base:
"To do this, login to your account, click on "Domains," click on the domain you want to be protected, click the "Edit" icon in the "DNS configuration" field, and click "Add DNS MX Record." On that page, leave the name blank, set the priority to 10 and put mx0.steadfast.net in the data field. After submitting you will be taken back to the DNS management page where you will click the trash icon next to the old MX record to delete it. If you do not delete it, half of your email will bypass the SPAM filter.
By default all email marked as SPAM will have the "X-MailFoundry: Spam" entry added to the headers, allowing you to filter based on that. If you want more control over your domains simply open a ticket with our Enterprise Anti-SPAM department at support.steadfast.net with a proposed username and password for the account as well as the domains you have protected and we can set you up with a SPAM filtering user account. That account will allow you to treat the mail differently, setup whitelists, etc."
Basically, I'm not sure whether some messages might be flagged as spam and end up in a folder without my knowledge.
As it says, they are flagged by default, they are not moved into another folder or different email address by default, that would be done through the control panel at https://mx0.steadfast.net

That would need to be setup manually and you would need to request it for each domain.
